Winter Backcountry Blondies

I love these bars for winter excursions, when my body is craving fat and long-lasting calories. The bars have a cool history too – they were originally inspired by a homemade treat provided to us on a boat taxi we hired in Alaska during an overnight trip. I love thinking about being in Alaska when making/eating the bars…

Makes about 24 bars

  • 1c butter
  • 1-1/3c brown sugar
  • 1/2c honey
  • 2 Tbls yummy oil (light olive oil, coconut oil, or hazlenut oil, etc.)
  • 2c whole wheat flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs + 2 egg yolks
  • 3tsp vanilla
  • 1 1/2c to 2c cranberries
  • +/- 1c white chocolate chips
  • +/- 1c nuts (chopped macadamia/pecans, slivered almonds, etc.), toasted optional
  • +/- 1/2c shredded (or 1c flaked) unsweetened coconut

Preheat oven to 350 degrees, grease a 13×9-inch pan lined w/ foil

In a saucepan, bring the butter to a boil and cook until golden brown, stirring constantly (it will brown, just wait for it…)Remove from heat. Stir in brown sugar, honey, and oil  into butter. Set aside to cool until barely warm. Beat together  eggs, egg yolks, and vanilla then add to the butter/sugar mix (once it is no longer hot). 

Wisk together flour, baking powder, baking soda, and salt.  Add dried fruit, nuts and coconut.  Add butter/egg mixture and mix thoroughly. Pour into prepared pan (smooth surface with spatula)

Bake in preheated oven for 25-40 minutes (it varies widely based upon your oven and altitude and the ingredients you use), until a toothpick inserted into the center comes out clean.  Cool completely in the pan, on a rack. Once cooled, take out of pan and cut into bars. Freeze for future use.
