Back-country Salmon Chowder

This is another variant that uses the ever flexible and delicious instant corn chowder soup mix, like my Corn and Potato Chowder.  Having a quick hot meal on cold/wet nights or after a long, rough day can be such a life saver… .

Feeds 2 for dinner:

  • 1 cup corn chowder soup mix (note 1.)
  • 1/2 cup freeze-dried corn (note 2.)
  • 1/2 cup freeze-dried peas (note 2.)
  • 1/2 cup instant mashed potatoes
  • 5 oz salmon in a foil pouch (e.g. Chicken of the Sea)
  • 2 oz (or more) Cheddar or parmesan cheese
  • Salt and pepper to taste

At home, combine soup mix, veggies, and instant potatoes in a ziploc (if you use a Ziploc Zip N Steam Bag, you can add re-hydrate the meal right in the bag). Keep other items separate.

At camp, bring 4 cups water to a boil then add to soup+veggie+potato mix. Stir. Add salmon. Add more water if desired. Let sit for minute or two. Top with cheese.

Shopping notes:
1. Usually found at natural food stores in bulk, but you can also find single-serve versions in most grocery stores (this latter is more expensive).
